Dr. Walters received his B.S. in Pharmacy from the University of Wisconsin in 1974 and his Ph.D. in Medicinal Chemistry from the University of Kansas in 1978. Following postdoctoral studies at Indiana University, he carried out industrial research from 1979-1991 in computer-aided molecular design and taste chemoreception. From 1987-1991 he also served as Adjunct Assistant Professor of Medicinal Chemistry at the University of Illinois at Chicago. In 1991, he joined the faculty at the Rosalind Franklin University of Medicine and Science (formerly Finch University of Health Sciences/The Chicago Medical School). He has served as an expert witness on sweetener chemistry and biochemistry in several cases.
Dr. Walters spent 12 years carrying out research in the pharmaceutical industry and food industry, particularly in the field of sweetener research while working for the NutraSweet Company. He has published extensively in the field of sweet and bitter taste. He edited the book Sweeteners: Discovery, Molecular Design, and Chemoreception (American Chemical Society Books, Washington DC, 1991), which won the Platinum Award from the American Chemical Society. In 1991 he joined the Biochemistry faculty at The Chicago Medical School. He has been a consultant to many companies in the food industry. In 1998 he served as an expert witness in a sweetener trade case for the U.S. International Trade Commission. Professor Walters has spoken to numerous professional and lay audiences on the subject of sweeteners.
