Amber Haroldson, PhD, RDN, CD

Clinical Assistant Professor

Amber Haroldson, PhD, RDN, CD is a registered dietitian nutritionist and Clinical Assistant Professor of Nutrition within the Chicago Medical School. Dr. Haroldson completed her PhD in Nutrition at the University of North Carolina at Greensboro. There, she conducted research to investigate the influence on the child on family dietary and physical activity behaviors with a focus on Hispanic immigrant families. Dr. Haroldson also gained some teaching experience and worked as a clinical dietitian providing medical nutrition therapy using principles of the Nutrition Care Process Clinical settings included Level II Trauma hospital, an outpatient care center, and a behavioral health hospital. After finishing her PhD, she worked as an Assistant Professor at Ball State University in Indiana. There Dr. Haroldson taught a variety of face-to-face and online courses, and her research focused on nutrition education and consumer behaviors. A move back to Wisconsin led her to a position in the Chicago Medical School. In addition to her teaching responsibilities, Dr. Haroldson works as a Clinical Nutritionist at University of Wisconsin Hospital, Carbone Cancer Center and inpatient oncology unit.
