Beth L. Sponseller, MS, RDN, CFT, CDE

Beth L. Sponseller, MS, RDN, CFT, CDE, is an instructor for the Department of Nutrition at Rosalind Franklin University of Medicine and Science in the Chicago Medical School. She obtained her Bachelor of Science through a Coordinated Undergraduate Program in General Dietetics from Eastern Michigan University and completed her Master of Science degree in Nutrition Education from Rosalind Franklin University of Medicine and Science. She is a Certified Diabetes Educator (CDE) through the National Certification Board of Diabetes Educators and is a Certified Fitness Trainer (CFT) through the International Sports Sciences Association.

Beth has been as a Registered Dietitian Nutritionist for 30 years and has worked in several positions including Clinical Dietitian, Outpatient Nutrition Counselor, Food and Clinical Nutrition Site Coordinator, Health Educator, and Director of Client Services and Education. After completing her MS degree, Beth began teaching online, hybrid and face to face courses at multiple colleges and universities including Kaplan University Online, Lower Columbia College, and Washington State University. She is a member of the Academy of Nutrition and Dietetics and a member of many dietetic practice groups including Diabetes Care and Education (DCE), Sports, Cardiovascular and Wellness Nutritionists (SCAN), Dietitians in Integrative and Functional Medicine (DIFM), Nutrition Entrepreneurs (NE), and Weight Management.
